However, skirt steak (or side steak) is very affordable. You can split half a pound of steak that costs less than $ 10. How is that for a cheap dinner! It is also SO ready to prepare. You can have this grilled meal on the table in less than 10 minutes (after marinating). And finally, talking about marinating, smoking steak lovingly absorbs every taste you put on it. That brings me to the perfect accompaniment … my Parmesan Chimichurri sauce.
Colorful Chimichurri is a fresh herb-based spice that is a culinary specialty of Argentina and Uruguay. This famous sauce has quickly become popular around the world. It is ridiculously easy to make and tastes like a better, fresher, zingier version of pesto!
My sour, herbaceous and absolutely addictive Parmesan Chimichurri sauce is made with parsley, coriander, basil, garlic, shallot, olive oil, red wine vinegar, a handful of nutty Parmesan cheese and a few other tasty ingredients. It has such a pure taste and tastes so fresh with the added lime juice. This sauce takes only a few minutes to make in a food processor or blender and doubles as a marinade. The flavors come together so perfectly with the skirt steak. Simple, absolutely delicious and more than tasty!
After the Skirt Steak has been marinated for a while, cook the steak quickly on high heat to sear the outside while cooking the inside just to medium-rare. You can achieve this inside or outside. Some people use the grill, others use a BBQ outside, but I prefer an indoor grill pan (love this pan). I always use my familiar meat thermometer (it is the best), so I have never cooked my protein too long! Then I cut the skimboard thin and serve it slathered in this heavenly Parmesan Chimichurri sauce. ingredients
- Chimichurri Sauce:
- 1 cup fresh flat leaf parsley, no stems
- 1 cup of fresh coriander
- ½ cup of fresh basil
- 2 teaspoons of fresh oregano
- ¾ cup of olive oil
- 3 cloves of garlic
- 1 shallot, peeled
- 1 jalapeno, stalk removed and sown
- 2 tablespoons red wine vinegar
- 1 tablespoon fresh lime juice
- 2 tablespoon of mayonnaise
- 3 tablespoons of Parmesan cheese
- ½ teaspoon ground cumin
- ½ teaspoon of red pepper flakes
- ½ teaspoon of garlic powder
- ½ teaspoon of salt
- ¼ teaspoon freshly ground black pepper
- Steak:
- 1½ pound smock steak
- ¼ cup of soy sauce
- ¼ cup of Chimichurri sauce
Instructions
- For the chimichurri: combine all ingredients in a food processor or blender. Process, smooth the sides from time to time, about 2-3 minutes. Take a ¼ cup to marinate the steak and place the rest in an airtight container in the refrigerator.
- For the steak marinade: combine the soy sauce and the ¼ cup of Chimichurri sauce in a small bowl until everything is mixed well. Sprinkle the steak with salt and pepper and place it in a resealable plastic bag (cut the steak in half crosswise to fit if necessary). Pour the marinate mixture in, close the bag and marinate for 1 hour at room temperature.
- Heat BBQ or a heavy skillet on a high heat to smoke. Take the steak from the marinade and place it on the grill. Cook 2-3 minutes on each side (use the meat thermometer to reach 132 ° F for medium red or until you cook it to your liking). Transfer to a plate, cover loosely with foil and rest for 7-10 minutes.
- Cut thin slices on the grain and serve with the remaining Chimichurri sauce on the side.
