Did you know the way you eat could save your life? (Or at least make it way better.) Research is showing that eating fresh food and lots of vegetables is life changing. A hospital in Pennsylvania has even started fresh food by prescription to treat and prevent disease.
Our thoughts? This is the why behind this website. Because we believe eating fresh food can save lives. The reason we do what we do is that we think cooking and eating lots of vegetables can prevent and even reverse disease. However, we’re not doctors or nutritionists: we’re recipe developers. That means, we’ve got lots of recipes using the foods doctors and nutritionist say are good for you.
Here is a list of our 10 favorite filling plant-based main dish recipes. Plant-based here means vegan: no meat or dairy. A misconception we hear is that plant-based main dishes are just a pile of carrot and celery sticks and not filling. Au contraire: vegan main dishes need to be packed with whole grains, beans, nuts, and seeds to make them a lasting meal. Here are our favorites that are both filling and delicious. Instead of making pizza dough, using naan bread cuts the time significantly! These naan pizzas are quick and easy, and use hummus as the pizza sauce and a tahini miso drizzle to bring big flavor in place of cheese. {For gluten-free, use GF naan or pita}
3. Thai Salad with Peanut Sauce
This main dish salad showcases Thai flavors, featuring colorful vegetables, pan-fried tofu, and a tangy peanut sauce. {Also gluten-free}
4. Chickpea Fattoush Nourish Bowl
This one is a Lebanese salad-turned nourish bowl! Fresh Mediterranean flavors abound, featuring crispy pita, spiced chickpeas, and a zesty lemon dressing. {For gluten-free, use GF pita}
5. Cauliflower and Tomato Coconut Curry

Last but not least, our favorite nourish bowl (or Buddha bowl) featuring roasted sweet potatoes and cauliflower and a creamy lemon tahini dressing. Here we’ve used black rice (forbidden rice) as an interesting addition. {Also gluten-free}
